Product Description

A deep, complex and lactic cheese made by Tom Caller at Westcombe Dairy in Somerset. This wonderfully complex cheddar that has been perfected by Tom Carver, is entirely made by hand and has a wonderfully complex taste with undertones of caramel, hazelnut and citrus and a firm, buttery texture. The truckles are bound in cloth and rubbed with lard before being turned by hand daily for up to 18 months.
