An aromatic sauce bursting with fragrant coriander and juicy tomatoes to bring out the creamy coconut and tangy tamarind for a mouth-watering combination of fragrance and spice perfect for fish.
Prep & Usage
- Pour 3 tbsps of oil in a hot pan and then add the sauce.
- Add 400g of fish. Cook on a medium heat with the lid closed for 5 minutes.
- Remove the lid and simmer, stirring regularly, until the fish is cooked and the sauce has thickened.
- Sprinkle fresh coriander to garnish and serve with rice.
The spices in this sauce also combine perfectly with peppers, cauliflower, aubergine and potatoes to provide a tasty vegetarian option bursting with flavour.
