The fantastic Lincolnshire Poacher cheese expertly smoked over oak chips. Lincolnshire Poacher is a fantastic hard cheese made by Simon Jones on his family farm. The cheese is a rich and full flavoured cheese which is matured for between 14-16 months to help the great flavours develop.
The Poacher Smoked is smoked cheese at its best, cold smoked over oak chips at a local smoke house, resulting in a golden brown colour to the cheese and a delicate smoky taste that doesn't overpower the cheese.
Flavour and Aroma:Slight seasonal variations which are characterised by combinations of medium flavour level, rounded, sweet nutty with grass/earth notes with absence of pronounced whey, acidic, mould or other abnormal flavours.
About the Producer
Lincolnshire Poacher cheeses are handmade on the farm at Ulceby Grange, Alford, Lincolnshire. The farm has a herd consisting of 230 Holstein cows and followers, grazing on land situated in the Lincolnshire Wolds. Only farm milk is used for cheese production.
