This variety of the San Marzano tomato was rescued from extinction by the Slow Food Movement in the mid-nineties. The movement, made up of groups of committed farmers, producers, cooks and consumers actively supports local agricultural and culinary traditions in respect of the natural and cultural resources of their region.
These whole peeled tomatoes are grown in very small quantities in specific areas of the fertile Campania region of Southern Italy. Once harvested they are washed and boiled for just 13 minutes, nothing else is added giving an perfect aromatic and flavourful fruit loved by chefs around the world, a perfect base for all your tomato sauces and a delicious topping for your Margherita Pizza!
