Rachel is not your typical Goat’s cheese. It is a semi hard washed rind cheese with a delicate yet moreish sweet medium flavour, the best of British.
A modern washed rind goats cheese from White lake Dairy in Somerset. Made from unpasteurised goat's milk and rind washed with brine, the cheese takes its name romantically from an old flame of the cheesemaker. This cheese is Alpine in style, with a full, rich, and complex flavour. This beautiful cheese goes well grated on pasta, salads, atop almost any meal. Try it grilled on toast or in a sandwich to truly transform your lunchtime.
