Product Description

A delicious ewe's milk cheese with complex flavours of burnt caramel and hazelnuts. 'Lord of The Hundreds' is one of the finest British ewe's milk cheeses in production, made by Clint at the Traditional Cheese Dairy in Stonegate, Sussex.

Unpasteurised milk from Friesland ewes' is used to create this brilliant modern cheese that is hand ladled into baskets and left unpressed resulting in a wonderful open texture and a distinctive 'pave' like appearance. The end result is a complex cheese with flavours of burnt caramel and hazelnuts balanced by grassy notes, there is a slightly grainy texture with the occasional crystalline crunch. Its complex flavours and texture make it a wonderful alternative to parmesan or pecorino. The cheese takes its name from the Saxon era, the lord, who was the tax collector who controlled 100 acres of land. There is a monument to this practice at the Traditional Cheese Dairy farm.
