Four generations of dairy farmers form part of this history at artisan cheesemaker Casa Madaio, where the natural caves of Castelcivita are used for ageing their cheeses, following historic recipes and traditions. These natural caves provide a hermitage for the long maturing process of the most precious cheeses.
