A flagship cheese with traditional heritage from Campania, this aromatic, golden brown semi-hard cheese from cow's milk is aged for around 4 months, its layers developing through the maturing process. About the Producer
In the heart of Cilento National Park is a land rich in the tradition of milling and the historic creation of the Mediterranean diet. Four generations of dairy farmers form part of this history at artisan cheesemaker Casa Madaio, where the natural caves of Castelcivita are used for ageing their cheeses, following historic recipes and traditions. These natural caves provide a hermitage for the long maturing process of the most precious cheeses.
