Old red wine casks are used to barrel our signature gin giving it an oak and sweet caramel flavour.
When Jerry Thomas wrote the first Cocktail book of all time in 1860, there was no London dry gin style. The first gin cocktails were all mixed with Old Tom Gin - usually kept in old barrels and slightly sweetened. Admitting that the Gin Eva team had never tried producing an original Old Tom style gin, the approach was the fruit of their imagination. Gin Eva went back to the roots and barrelled their signature gin for several months in old Mallorcan red wine barrels.
The result is an amber coloured gin. Juniper, citrus and oak are balanced, with a slight sweetness which makes it bold and round. A great sipping gin, it goes extremely well with vermouth and bitters and you really should get a copy of Jerry Thomas “The Bon-Vivants Companion” and try one of his vintage cocktails like the 'Martinez'.

Prep & usage
As a Gin & Tonic: 2.5cl / 25ml to 5cl / 50ml GIN EVA Old Tom with a great Indian tonic and a slice of lemon.
5cl / 50ml Old Tom Gin, 3cl Italian Vermouth, dash of Angostura Bitters. Stir over ice add to glass and garnish with a maraschino cherry.
Store out of sun in a cool room (cellar / pantry)
