A seasoned ricotta made from buffalo milk, ivory in colour with intense cream and milk fragrance and melt-in-the-mouth full flavour. An exciting new version of the traditional salted ricotta, it's aged at least 40 days, being turned 45 degrees according to classic methods, becoming a semi-hard cheese perfect for grating over fresh pasta. The name 'little barrel' in Italian comes from its shape.
About the Producer
In the heart of Cilento National Park is a land rich in the tradition of milling and the historic creation of the Mediterranean diet. Four generations of dairy farmers form part of this history at artisan cheesemaker Casa Madaio, where the natural caves of Castelcivita are used for ageing their cheeses, following historic recipes and traditions. These natural caves provide a hermitage for the long maturing process of the most precious cheeses.
